    We have 18 stations all around the country where producers deliver the picked cherries of the day. Then our trucks rendezvous the country to gather the cherries and bring the to our Wet Mill at Antigua Guatemala.

    Some producers deliver directly to our Wet Mill, this depends on whether a station or the wet mill is closer to where the producer's farm is located.

    We weight the cherries that have been delivered and issue a receipt with which they will get paid via bank transfer in 2 to 5 business days.

    We then throw in the cherries in one of our reception tanks, which are divided between conventional and organic.

2. CLASSIFICATION

    Then the cherries are move using water to the first classification siphon, which separates the cherries with the right density from the floaters and dry cherries.

    The new siphon with continuous system that we invested in recently, has allowed us to reduce around 500 m2 of water daily. The old siphons measured 80 m2, the new one only 1.5m2.

    The cherries with the right density go through the depulpers which take out the skin from the cherries.

    Once you've finished depulping the cherries, the beans go through the sorter which makes sure that only the beans that have been correctly depulped go to the next step.

Then the beans go straight to one of the fermentation tanks, where they will remain from 18 hour up to 36 hours with or without water depending on if the fermentation type we decide to do.

3. FEMENTATION

After we've finished fermenting the beans are now move through clean water to the washing corridors were we'll washed the beans using the clean water and wood pallets to move the beans until any mucilage that was left in the bean has been completely removed.

4. WASHING

Once the beans have been washed we'll move them to the patio to dry, and after they are almost finish drying we will move theM to the mechanical dryers to finish drying them.
